To start, slow down as you see the dog approaching. This is probably counterintuitive to what you want to do in that kind of situation, but the physics make sense. The dog is coming at you from one angle, and if you slow down, it will need to stop running or change the angle at which it’s approaching to adapt to your new position.
As the dog changes its angle of approach, you can start accelerating again. If you accelerate quickly (but smoothly), the dog is unlikely to be able to adjust to cut you off again. That means that even if it continues to chase you, it will be safely behind you as you ride off into the distance.
